Oven-roasted tomatoes with wild fennel

Zutaten

Serves 4

800 g Tomaten (Fleischtomaten, Berner Rose oder Pelati) 2 EL wildes Fenchelgrün, geschnitten, plus ein paar Blüten zum Dekorieren 1 TL frischen Rosmarin gehackt 4 EL Olivenöl 3 Knoblauchzehen, gehackt Steinsalz schwarzer Pfeffer aus der Mühle 1 TL Balsamicoessig 2 EL Hanfsamen

Zubereitung

Den Ofen auf 175°C vorheizen.

Ein rundes Wähenblech mit Backpapier auslegen und darauf die Tomaten mit der Schnittseite nach oben verteilen. Rosmarin, gehackter Knoblauch und Olivenöl verrühren. Die Tomaten salzen und die Rosmarin- Knoblauch-Öl-Mischung mit einem Esslöffel darüber geben.

Im Backofen ca. 20 Minuten bei 175°C garen.

Dann mit wenig Balsamico-Essig beträufeln. Etwas Zitronenschale darüber reiben, Hanfsamen, feingeschnittenes Fenchelgrün und frisch gemahlenen Pfeffer darüber geben.

Variant

10 minutes before the end of cooking, scatter 300 g of diced feta over the top. Bake in the oven for another 10 minutes, then drizzle with balsamic vinegar. Grate a little lemon zest over the top, then sprinkle with hemp seeds, finely chopped fennel fronds and freshly ground pepper.

The tomatoes can be enjoyed warm or cold. They go well with pasta, couscous, baked potatoes and grilled dishes.
